The perfect blend of the island's favorable climate, elevated location, and intentional farming practices make the Rodriguez’s coffee truly exceptional.
The main farm of 13 acres stands between 1,900 to 2,000 feet above sea level. When the property was purchased by Armando and Karina back in 2004, it was a macadamia nut orchard with 1,200 trees already producing nuts. In spring 2013, after almost ten years of traveling from Phoenix, Arizona to Hawaii to take care of the macadamia nuts orchard, Armando left the management of his small construction company to his brother, and moved here, making this piece of paradise their permanent home.
What is Honey Process?
The majority of coffee processed at Aloha Star is processed as honey, also known as pulped natural. When the coffee comes to the mill from the field the coffee is floated to remove defects and over pipes then pulped to remove the skins. The seed at this point is covered in a sticky mucilage then put out to dry. This process contains no honey but refers to how sticky the coffee becomes as it dries and was referred to Miel (honey in Spanish) in Central America where it was used widely. This process is a popular technique for farms such as Aloha Star that has limited amounts of water. Drying the coffee in the mucilage in this case creates a sweeter more syrupy cup and tones down the acidity.
